Best Ever Carrot Cake...
This is the best carrot cake that I've ever had! My mom always makes it for my birthday when we're able to be together at that time. It's made with freshly grated carrots and, of course, the delicious cream cheese frosting. Yummy!
Ingredients:
- 2 cups sugar
- 2 cups flour
- 1 1/2 cup vegetable oil
- 2 teaspoons cinnamon
- 2 teaspoons baking powder
- 2 teaspoons baking soda)
- dash of salt
- 4 eggs
- 1 cup grated pecans
- *3 cups grated carrots
Directions:
- Preheat oven to 350 degrees.
- Sift the flour, salt, baking soda, baking powder, & cinnamon in one bowl.
- Combine flour, salt, and baking soda.
- Mix sugar & oil. Beat together in different bowl with eggs.
- Add flour mixture and sugar mixture. Add pecans & grated carrots. *Medium grating for carrots.
- Bake at 350 degrees for 45 minutes in a long pan (9"x13" or so). Cool.
Cream Cheese Icing
Definately the "icing on the cake"!
Ingredients:
- 1 (8oz.) package of cream cheese
- 1 lb. powdered sugar
- 1/2 stick of butter
- 2 teaspoons vanilla
Directions:
- Mix ingredients together thoroughly. May add a bit more powdered sugar or teaspoon of water if needed. Sprinkle with nuts if desired.
