Italian Spaghetti Pie

    Ingredients

    • 1 box spaghetti
    • 1 container ricotta cheese
    • 2 eggs
    • 1 1/2 cups Mozzarella cheese
    • mushrooms (optional)

    Directions:

    1. Cook spaghetti according to instructions on box. Rinse, drain, & cool.
    2. Press spaghetti into lightly oiled glass pie plate until about 1" thick spaghetti is covering the dish.
    3. Mix Ricotta cheese, eggs, & the Mozzarella cheese together leaving a bit of the Mozzarella for later.
    4. Spoon and press Ricotta mixture onto the spaghetti leaving a 1" plain spaghetti circle around the outside edge
    5. Add mushrooms at this point if desired.
    6. Add your favorite spaghetti sauce into the middle taking care to leave another 1" circle of the Ricotta mixture showing.
    7. Sprinkle with Mozzarella. Bake at 400 degrees until thoroughly warmed and cheese is melted. Remove from oven, cool slightly and add mint leaves sprig to the center of dish. Serve & enjoy!
