Well a lot of you folks must be thinking exactly what I think, the sound of the word makes you want to run and get out the toothbrush.
Contrary to popular "non-Southern" beliefs, grits do not grow on trees, grits is not Cream of Wheat, grits is not made from wheat at all. Grits are made from coarsly ground corn. To cook grits is an experience. To eat them is another. One tip I can give you, is never, ever, leave grits standing in a pot. It becomes like cement and hard to clean. In my house, I cook the grits and only two of us actually EAT them...Bubba and the DOG. Says a lot for this food doesn't it? In any case, below is my recipe for GRITS.

3 tablespoons stone-ground grits
1 tablespoon real butter
1 cup water
salt to taste
Pour the grits into a large bowl and cover with cold water. Skim off the chaff as it floats to the surface. Stir the grits and skim again until all the chaff has been removed. Drain the grits with a sieve.
Bring 1 cup of water to a boil in a medium-sized saucepan. Add salt and slowly stir in the grits. Cook at a simmer, stirring frequently, until the grits are done (they should be thick and creamy) about 40 minutes.
